Thai Slaw & Peanut Butter Chicken Burgers

A spicy-sweet fusion that packs crunch and punch- these burgers are layered with tangy Thai slaw and creamy peanut butter that pair for a delicious dish.

Ingredients

  • 1 ½ cups packed coleslaw mix
  • ¼ cup Thai dressing
  • 1 ¼ pounds ground chicken
  • 3 Tbsp thinly sliced green onions
  • 1 ½ tsp Our Family® Garlic Powder
  • ½ tsp Our Family® Salt
  • ½ tsp ground Finest Reserve™ by Our Family® Black Peppercorn
  • Our Family® Canola Oil No Stick Cooking Spray
  • 4 sesame seed buns
  • ½ cup Our Family® Creamy Peanut Butter
  • 8 (⅛-inch-thick) slices vine-ripened tomatoes
  • 4 (⅛-inch-thick) slices red onion
  • 1 small avocado, peeled, pitted and thinly sliced

Directions

  1. In medium bowl, toss coleslaw mix and dressing; cover and refrigerate. Makes about 1 cup.
  2. In large bowl, gently mix chicken, green onions, garlic powder, salt and pepper; do not overmix. Form chicken mixture into 4 (½-inch-thick) patties; spray both sides with cooking spray. Place patties on hot grill rack; cover and cook 8 minutes or until internal temperature reaches 165°, turning once. During last minute of cooking, place buns, cut side down, on hot grill rack; cover and cook 1 minute or until toasted.
  3. Spread cut sides of buns with peanut butter; serve burgers in buns topped with coleslaw mixture, tomatoes, red onion and avocado. Makes 4 burgers.
