Sweet Mesquite Molasses BBQ Dried Cherry Grilled Salmon

Ingredients

  • 1/4 cup Our Family® Dried Cherries
  • 3/4 cup Finest Reserve™ by Our Family® Sweet and Smoky Sweet Mesquite Molasses Barbecue Sauce
  • 4 salmon fillets (about 5 ounces each)
  • 1/2 tsp Our Family® Coarse Kosher Sea Salt
  • 1/2 tsp Our Family® Pure Ground Black Pepper
  • Chopped fresh parsley for garnish (optional)

Directions

1. Prepare outdoor grill for direct grilling over medium-high heat. In small bowl, add cherries and enough hot water to cover; soak 10 minutes. Drain cherries; transfer to cutting board and coarsely chop.

2. In small saucepot, heat sauce to a simmer over medium heat; stir in cherries and cook 2 minutes, stirring occasionally. Reserve 1/2 cup sauce mixture. Makes about 3/4 cup.

3. Sprinkle salmon with salt and pepper. Place salmon, skin side up, on hot grill rack; cover and cook 3 minutes. Turn salmon, brush with remaining 1/4 cup sauce mixture; cover and cook 3 minutes or until internal temperature reaches 145°.

4. Serve salmon with reserved 1/2 cup sauce mixture garnished with parsley, if desired.
