Smothered Beef & Bean Burrito


  • ½ cup Taco-Spiced Ground Beef
  • ½ cup Our Family® Refried Beans
  • 1 burrito style flour tortilla
  • ¼ cup Our Family® Shredded Cheddar Cheese
  • ¼ cup Our Family® Red Enchilada Sauce
  • ½ cup packed shredded romaine lettuce
  • 2 Tbsp Our Family® Plain Nonfat Greek Yogurt
  • Chopped Our Family® Grape Tomatoes and/or green onions for garnish (optional)

  1. Place oven rack 6 inches from broiler; preheat broiler to high. In microwave-safe bowl, stir beef and beans; heat in microwave oven on high 2 minutes or until heated through, stirring once.
  2. Place tortilla on work surface; spread beef mixture down center and top with 2 tablespoons cheese. Fold sides over filling and roll up burrito; place on rimmed baking pan. Spread enchilada sauce over burrito; sprinkle with remaining 2 tablespoons cheese and broil 2 minutes or until cheese melts.
  3. Serve burrito topped with lettuce and yogurt garnished with tomatoes and/or onions, if desired.
