Slow Cooker Cheesy Chicken Tortilla Soup

You will not only love the bold flavors of this Slow Cooker Cheesy Chicken Tortilla Soup, but the simplicity of a delicious recipe that comes together in one slow cooker! A zesty combination of garlic, onion, jalapeño and chili powder, blend perfectly with the smooth and creamy cheese in this mouthwatering soup!

Ingredients

  • 1 can (28 ounces) Our Family® Diced Tomatoes with Green Chiles
  • 4 garlic cloves, minced
  • 1 large white onion, halved and chopped
  • 2 small jalapeño peppers, finely chopped
  • 4 cups Our Family® Reduced Sodium Chicken Broth
  • 1 Tbsp Finest Reserve™ by Our Family® Ground Cumin
  • 1 tsp Finest Reserve™ by Our Family® Chili Powder
  • ½ (32-ounce) package Our Family® Smooth & Creamy cheese product, cut into 1-inch pieces
  • 3 cups shredded skinless rotisserie chicken breast meat
  • 2 cups tri-color tortilla strips
  • Our Family® Original Sour Cream, chopped avocado, lime wedges and/or chopped fresh cilantro leaves for garnish (optional)

Directions

  1. In 5- to 6-quart slow cooker, stir tomatoes with their juice, garlic, onion, jalapeño, broth, cumin and chili powder; cover and cook on high 2 hours or low 4 hours, stirring occasionally.
  2. Stir in cheese and chicken; cover and cook on high 30 minutes or low 1 hour or until heated through and cheese is melted. Stir in 1 cup tortilla strips. Makes about 12 cups.
  3. Serve soup topped with remaining 1 cup tortilla strips garnished with sour cream, avocado, lime wedges and/or cilantro, if desired.
