2 Our Family® Salmon Fillets (about 5 ounces each), skin removed and cut into 1-inch pieces
6 garlic cloves, minced
1 cup Our Family® Half & Half, at room temperature
1/4 cup Our Family® Grated Parmesan Cheese plus additional for garnish (optional)
1 cup frozen Our Family® Sweet Green Peas
3/4 cup Finest Reserve™ by Our Family® Green Pesto Pasta Sauce
2 Our Family® Grade A Large Egg Yolks
1/2 tsp Our Family® Coarse Kosher Sea Salt
1/2 tsp ground Finest Reserve™ Black Pepper Grinder
Chopped fresh basil for garnish (optional)

Directions
Prepare pasta as label directs for al dente pasta; reserve 1/2 cup cooking water, drain, return to saucepot and cover to keep warm.
Heat large skillet over medium-high heat. Add bacon; cook 3 minutes or until beginning to crisp. Add salmon; cook 5 minutes or until bacon is crisp and internal temperature of salmon reaches 145°, stirring frequently. Transfer bacon mixture to paper towel-lined plate. Makes about 1 1/2 cups.
In same skillet with drippings, cook garlic over medium-high heat 1 minute or until fragrant, scraping browned bits from bottom of skillet with wooden spoon. Add half & half; heat to a simmer. Add cheese; cook 1 minute or until cheese is melted, stirring frequently. Stir in peas, pesto and reserved cooking water; heat to a simmer and remove from heat.
In small bowl, whisk egg yolks, salt and pepper; stir into skillet. Add pasta and bacon mixture to skillet; toss until well combined. Makes about 6 cups.
Serve pasta mixture garnished with basil and/or cheese, if desired.
