Pimento Cheesy Potatoes


  • Our Family® Vegetable Oil No Stick Cooking Spray
  • 1 container (11 oz.) pimento cheese
  • 1 can (10.5 oz.) Our Family® Cream of Chicken Condensed Soup
  • 2 cups Our Family® Sour Cream
  • 5 Tbsp Our Family® Unsalted Butter, melted
  • 1 tsp Our Family® Garlic Powder
  • ½ tsp  Our Family® Kosher Salt
  • 1 package (28 oz.) potatoes O’Brien with onions & peppers, thawed
  • 1 cup Our Family® Shredded Mild Cheddar Cheese
  • 1 cup coarsely crushed Our Family® Classic Potato Chips
  • 3 green onions, thinly sliced

  1. Preheat oven to 350°; spray 13 x 9-inch baking dish with cooking spray.
  2. In large bowl, stir pimento cheese, soup, sour cream, butter, garlic powder and salt; fold in potatoes. Spread potato mixture in prepared dish; bake 45 minutes.
  3. Sprinkle potato mixture with cheddar cheese and chips; bake 25 minutes or until heated through, edges are bubbly and cheese is melted. Makes about 8 cups.
  4. Serve cheesy potatoes sprinkled with onions.
