Lightly beat the eggs in a medium bowl using a fork or a whisk.
Over low heat melt 1 Tbsp of butter in a medium, nonstick skillet and swirl the butter to coat the bottom and sides.
Add the beaten eggs and cook slowly, scraping the pan using a rubber spatula. The eggs should no longer be liquid and fully cooked after about 10 minutes.
