Breakfast Chia Pudding with Berry Compote

Ingredients

  • 2 cups unsweetened almond milk
  • 1/2 cup chia seeds
  • 3 tablespoons Our Family® Pure Honey
  • 2 cups Our Family® Fresh Frozen Berry Medley
  • 1/2 cup Our Family® Vanilla Almond Granola
  • 1/4 cup Our Family® Roasted Salted Sunflower Seeds

 

Approximate nutritional values per serving (1/2 cup pudding, 1/4 cup compote, 2 tablespoons granola, 1 tablespoon sunflower seeds): 330 Calories, 15g Fat, 2g Saturated Fat, 0mg Cholesterol, 112mg Sodium, 45g Carbohydrates, 12g Fiber, 24g Sugars, 16g Added Sugars, 8g Protein

Directions

  1. In large bowl, stir milk, chia seeds and 2 tablespoons honey; let stand 10 minutes. Stir; cover and refrigerate at least 2 hours or up to overnight. Makes about 2 cups.
  2. In small saucepot, heat berries, remaining 1 tablespoon honey and 2 tablespoons water to a simmer over medium heat. Reduce heat to medium-low; cook 10 minutes or until reduced by half, stirring occasionally. Remove from heat; cool completely. Makes about 1 cup.
  3. Stir pudding and divide into 4 (8-ounce) glasses or jars; top with berry compote, granola and sunflower seeds.
