1. Place shrimp in large zip-top plastic bag; pour 1 cup sauce over shrimp. Seal bag, pressing out excess air; refrigerate at least 1 or up to 4 hours.
2. Soak skewers in water 15 minutes. In medium bowl, stir coleslaw mix and remaining 1/4 cup sauce; cover and refrigerate. Makes about 1 packed cup.
3. Prepare outdoor grill for direct grilling over medium heat. Remove shrimp from marinade; discard marinade. Thread shrimp onto skewers; sprinkle both sides with BBQ rub. Place skewers on hot grill rack; cover and cook 5 minutes or until shrimp turn opaque throughout, turning once. Makes about 18 shrimp.
4. Serve shrimp in tortillas topped with coleslaw mixture, onions and tomatoes. Makes 8 tacos.
