Beef Taco Pasta Salad


  • ¾ cup Our Family® Rigatoni
  • 1 tsp Our Family® 100% Pure Olive Oil
  • 2 Tbsp Our Family® Real Mayonnaise
  • 1 Tbsp chopped fresh cilantro
  • 1 Tbsp fresh lime juice
  • ½ cup chopped romaine lettuce
  • ½ cup Taco-Spiced Ground Beef
  • ⅓ cup Our Family® Grape Tomatoes
  • 2 Tbsp Our Family® Shredded Cheddar Cheese
  • 2 Tbsp Our Family® Sliced and Pitted Black Olives

  1. Prepare rigatoni as label directs; drain. Transfer rigatoni to large bowl; add oil and toss. Refrigerate rigatoni 30 minutes or until cool.
  2. In small bowl, stir mayonnaise, cilantro and lime juice; add to rigatoni and toss. Fold in lettuce, beef, tomatoes, cheese and olives. Makes about 2 cups salad.
