Asparagus Pea Soup

Fresh, vibrant and full of flavor – this Asparagus Pea Soup is the perfect way to welcome Spring! Light yet creamy, it’s packed with seasonal goodness in every spoonful.

Ingredients

  • 1 Tbsp Our Family® 100% Pure Olive Oil
  • 1 bunch green onions, green and white parts sliced
  • 4 garlic cloves, minced
  • 1 container (32 ounces) Our Family® Vegetable Stock
  • 1 pound Our Family® Baby Dutch Yellow Potatoes (about 18 potatoes), cut lengthwise in half
  • 1 pound asparagus, 2 1/2 inches of ends trimmed and reserved
  • 1 bag (12 ounces) Our Family® Frozen Sweet Green Peas
  • 1/2 tsp Our Family® Salt
  • 1/2 tsp ground Finest Reserve™ by Our Family® Black Peppercorn Grinder
  • 3 Tbsp Our Family® Grated Parmesan Cheese

Cooked crumbled bacon, hemp hearts and/or lemon wedges for garnish (optional)

Directions

  1. In large saucepot, heat oil over medium-low heat. Add onions; cook 2 minutes or until tender, stirring frequently. Add garlic; cook 1 minute or until fragrant, stirring frequently. Add stock and 2 cups water; increase heat to medium and heat to a simmer. Add potatoes and reserved asparagus ends; cover and cook 20 minutes or until potatoes and asparagus ends are tender, stirring occasionally. Add peas and asparagus tops; cover and cook 5 minutes or until asparagus tops are tender, stirring occasionally. Remove from heat. Stir in salt and pepper; with immersion blender or blender, purée soup. Makes about 8 cups soup.
  2. Serve soup sprinkled with cheese garnished with bacon, hemp hearts and/or lemon wedges, if desired.
