Moroccan Inspired Red Pesto Pasta Salad

Ingredients

  • 1 package (16 ounces) Finest Reserve™ by Our Family® Fusilli
  • 1/2 cup Finest Reserve™ by Our Family® Red Pesto
  • 1/2 cup Our Family® Real Mayo
  • 2 Tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 3/4 tsp Our Family® Coarse Kosher Sea Salt
  • 3/4 tsp ground Finest Reserve™ Black Pepper Grinder
  • 1/2 tsp Our Family® Ground Cumin
  • 1/4 tsp Our Family® Ground Cinnamon
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped red or yellow bell pepper
  • 1/2 cup drained and rinsed Our Family® Garbanzo Beans
  • 1/2 cup drained Our Family® Small Pitted Olives
  • 1/2 cup shredded carrots
  • 1/4 cup coarsely chopped Our Family® Dried Apricots
  • 1/4 cup chopped fresh cilantro and/or mint
  • 1/4 cup Our Family® Seedless Golden Raisins

Directions

  1. Prepare fusilli as label directs for al dente fusilli; drain, rinse with cold water and cool completely.
  2. In large bowl, stir pesto, mayo, lemon juice, lemon zest, salt, pepper, cumin and cinnamon; fold in cucumber, bell pepper, beans, olives, carrots, apricots, cilantro, raisins and fusilli. Makes about 9 cups.
