Preheat oven to 350°; spray 13 x 9-inch baking dish with cooking spray.
In large bowl, stir pimento cheese, soup, sour cream, butter, garlic powder and salt; fold in potatoes. Spread potato mixture in prepared dish; bake 45 minutes.
Sprinkle potato mixture with cheddar cheese and chips; bake 25 minutes or until heated through, edges are bubbly and cheese is melted. Makes about 8 cups.
