Roasted Red Cabbage Wedge

Ingredients

  • Our Family® Canola Oil No Stick Cooking Spray
  • 1 large red cabbage, quartered
  • 2 Tbsp Our Family® 100% Pure Olive Oil
  • 1/4 tsp Our Family® Coarse Kosher Sea Salt
  • 1/4 tsp ground Finest Reserve™ by Our Family® Black Peppercorn Grinder
  • 4 slices turkey bacon, chopped
  • 3/4 cup lite blue cheese dressing or chunky blue cheese yogurt dressing
  • 1 cup quartered cherry tomatoes
  • 1/2 cup Our Family® Chopped Walnuts
  • 1/2 cup Our Family® Crumbled Blue Cheese
  • 1/4 cup chopped red onion

Directions

  1. Preheat oven to 425°; line rimmed baking pan with aluminum foil and spray with cooking spray. Place cabbage, cut side up, on prepared pan; drizzle with oil, and sprinkle with salt and pepper. Roast cabbage 30 minutes or until tender, and edges are browned and crisp.
  2. In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; transfer to paper towel-lined plate. Makes about 1/2 cup bacon.
  3. Serve cabbage wedges drizzled with dressing, and topped with tomatoes, walnuts, cheese, onion and bacon. Makes 4 wedge salads.
