Curried Coconut-Sweet Potato Purée

This Curried Coconut-Sweet Potato Purée is a flavorful side dish that combines the natural sweetness of sweet potatoes with the rich creaminess of coconut milk and the warm spices of curry powder. Ingredients

  • 3 large, sweet potatoes, peeled and cut into 1-inch pieces (about 2 1/2 pounds)
  • 1 can (13.66 fluid ounces) unsweetened coconut milk
  • 2 Tbsp Our Family® Unsalted Butter, softened
  • 1 Tbsp Finest Reserve™ by Our Family® Curry Powder
  • 1/2 tsp Our Family® Salt
  • 1/2 tsp ground Finest Reserve™ by Our Family® Black Peppercorn
  • Chopped fresh cilantro for garnish (optional)

Directions

  1. In large saucepot, heat potatoes and enough salted water to cover by about 2 inches to a boil over high heat; reduce heat to medium and simmer 15 minutes or until fork-tender. Drain potatoes; return to saucepot and let stand 10 minutes.
  2. In food processor, purée potatoes, milk, butter, curry powder, salt and pepper 1 minute or until smooth, scraping down sides of bowl occasionally. Makes about 4 cups.
  3. Serve sweet potato purée garnished with cilantro, if desired.
