Cowboy Caviar

This colorful and delicious dip is perfect for an afternoon snack in the spring or a dish to pass at a cookout!

Ingredients

  • 1 can (15.25 ounces) Our Family® Super Sweet Corn, drained and rinsed
  • 1 can (15.25 ounces) Our Family® Black Beans, drained and rinsed
  • 1 package (12 ounces) Our Family® Fresh Frozen Black-Eyed Peas, thawed
  • 4 garlic cloves, minced
  • 2 Our Family® Red and/or Yellow Bell Peppers, finely chopped
  • 1 small cucumber, finely chopped
  • 1 small jalapeño pepper, halved lengthwise, seeded if desired, and finely chopped
  • ½ large Our Family® Red Onion, finely chopped
  • ¼ cup packed chopped fresh cilantro
  • 1 cup Our Family® Zesty Italian Dressing
  • ½ cup fresh lime juice
  • ¾ teaspoon Our Family® Coarse Kosher Sea Salt
  • ¼ teaspoon ground Finest Reserve™ by Our Family® Black Peppercorn Grinder
  • 2 medium avocados, peeled, pitted and chopped
  • 1 ½ bags (12 ounces each) Our Family® Bite Size White Round Tortilla Chips

Directions

  1. In large bowl, toss corn, beans, black-eyed peas, garlic, bell peppers, cucumber, jalapeño, onion and cilantro until combined.
  2. In medium bowl, whisk dressing, lime juice, salt and black pepper; pour over corn mixture and toss. Cover and refrigerate at least 6 hours or up to 2 days.
  3. Just before serving, toss corn mixture and fold in avocados; serve with chips. Makes about 8 cups.

Chef's Tip
