Chorizo Egg Quesadilla

Ingredients

    • ¼ pound ground chorizo sausage
    • 4 Our Family® Grade A Large Eggs
    • ¼ tsp Our Family® Salt
    • ¼ tsp Our Family® Pure Ground Black Pepper
    • 1 Tbsp Our Family® 100% Pure Olive Oil
    • ½ cup Our Family® Shredded Monterey Jack Cheese
    • ½ cup Our Family® Shredded Sharp Cheddar Cheese
    • 1 (10-inch) burrito size flour tortilla
    • ¼ cup Our Family® Medium Thick & Chunky Salsa or Restaurant Style Salsa
    • Our Family® Sour Cream for garnish (optional)
    • chopped red onion (optional)
    • chopped jalapeño pepper, and/or sliced green onions for garnish (optional)

Directions

  1. In large, nonstick skillet, cook chorizo over medium-high heat 5 minutes or until browned, breaking up chorizo with side of spoon. With slotted spoon, transfer chorizo to paper towel-lined plate. Wipe out skillet.
  2. In medium bowl, whisk eggs, salt and pepper. In same skillet, heat oil over medium heat. Add egg mixture and sprinkle with cheeses; top with tortilla and cook 3 minutes or until eggs are golden brown and cooked through. Flip tortilla, egg side up; top 1 side of quesadilla with chorizo and salsa. Fold tortilla in half over filling; cook 1 minute or until heated through, turning once.
  3. Cut quesadilla into 4 wedges; serve garnished with sour cream, red onion, jalapeño and/or green onions, if desired.
