Cheesy Green Chile Cornbread Casserole

Ingredients

  • Our Family® Canola Oil No Stick Cooking Spray
  • 1 ¼ cups Our Family® Yellow Corn Meal
  • 1 Tbsp Our Family® Double-Acting Baking Powder
  • ½ teaspoon Our Family® Salt
  • 2 Our Family® Cage Free Large White Eggs
  • 1 cup Our Family® Lowfat Cultured Buttermilk
  • 1 cup Our Family® Original Sour Cream plus additional for garnish (optional)
  • ½ cup Our Family® Unsalted Butter (1 stick), melted
  • 1 can (14.75 ounces) cream style corn
  • 1 can (7 ounces) Our Family® Mild Diced Green Chiles
  • ¾ cup Our Family® Finely Cut Shredded Mexican Cheese
  • ¾ cup shredded Our Family® Pepper Jack Cheese
  • ½ cup sliced green onions plus additional for garnish (optional)

Directions

  1. Preheat oven 350°; spray 13 x 9-inch baking dish with cooking spray. In medium bowl, whisk corn meal, baking powder and salt. In large bowl, whisk eggs, buttermilk, sour cream and butter; whisk in corn meal mixture. Fold in corn, chiles, cheeses and onions; spread in prepared dish and bake 40 minutes or until top is golden brown. Let stand 10 minutes.
  2. Cut cornbread into 12 pieces; serve garnished with sour cream and/or onions, if desired.
