Egg Substitutions

Eggs are the MVP of most cake recipes, helping to bind everything together while adding moisture, volume, color, and flavor. But if you’re out of eggs (or just want to switch things up), don’t worry—there are plenty of egg-cellent substitutes!  

Ripe Mashed Bananas

Got an overripe banana hanging around? Smash it up and use it instead of an egg! One ripe mashed banana equals one egg. 

Unsweetened Applesauce

If you’re new to egg replacements, applesauce is a solid go-to. Just swap one egg for ¼ cup of unsweetened applesauce, and you’re good to go! If you only have sweetened or flavored applesauce, that works too—just know it might tweak the taste a little. 

 
Vinegar and Baking Soda 

Science to the rescue! Mix 1 tablespoon of vinegar (apple cider or white distilled) with 1 teaspoon of baking soda for every egg you’re replacing. This combo helps your cake rise and keeps it fluffy.  

Gelatin

Gelatin is a quick and easy substitute, but it’s important to note that it is made from animal protein. Combine 1 tablespoon of gelatin with 3 tablespoons of room temperature water to replace one egg. Then add to your cake batter.

Plain Yogurt

Yogurt is another great swap—just use ¼ cup per egg. Full-fat, low-fat, Greek—whatever you have should work. Unsweetened and unflavored is best if you don’t want to alter the taste of your cake.  

Soda

This one’s wild but works like a charm! Just add one can or 120z of soda to your favorite Our Family cake mix, and boom—you don’t need eggs, oil, or water. Different sodas can even add fun flavors, so get creative!  

For this trick, you can use regular soda or diet soda. You can also play around with the flavors. Here are a few popular flavor combinations:

Cola + Devils Food Cake Mix = Chocolate Cola

Lemon Lime Soda + Yellow Cake Mix = Zesty Citrus

Doctor Cola + Cherry Cake Mix = Cherry Chip

Cream Soda + Vanilla Cake Mix = Creamsicle

Root Beer + Vanilla Cake Mix = Root Beer Float

Orange Soda + White Cake Mix = Orange Creamsicle

Water, Oil, and Baking Powder 

No eggs? No problem. Mix 1 ½ tablespoons of neutral oil, 1 ½ tablespoons of water, and 1 teaspoon of baking powder to replace one egg. It’s a simple trick that works like magic!
