Cranberry Bars

Ingredients

  • Our Family® Butter Flavored No Stick Cooking Spray
  • 2 cups 1-to-1 gluten free flour
  • 1/2 cup Our Family® Old-Fashioned Rolled Oats
  • 2 Tbsp. ground flaxseed
  • 1/2 tsp kosher salt
  • 1 cup Our Family® Unsalted Butter (2 sticks), softened
  • 3/4 cup Our Family® Granulated Sugar
  • 1/2 cup Our Family® Brown Sugar
  • 1 large Our Family® Egg
  • 2 tsp Our Family® Vanilla Extract
  • 1 bag (12 ounces) cranberries
  • 2 Tbsp. fresh orange juice
  • 1 1/2 Tbsp. Our Family® Corn Starch
  • 1/2 tsp Our Family® Ground Cinnamon plus additional for garnish (optional)
  • Vanilla ice cream or whipped cream for serving (optional)

Directions

  1. Preheat oven to 375°. Line 13 x 9-inch baking dish with aluminum foil so foil extends about 2 inches over opposite sides of dish; spray with cooking spray.
  2. In medium bowl, whisk flour, oats, flaxseed and salt. In large bowl, with mixer on medium-high speed, beat butter, 1/4 cup granulated sugar and brown sugar 2 minutes or until light and fluffy, scraping down bowl occasionally. Add egg and vanilla extract; beat 1 minute or until incorporated, scraping down bowl occasionally. With mixer on medium-low speed, gradually add flour mixture and beat 1 minute or until just incorporated.
  3. Press 2/3 of the dough into bottom of prepared dish. In separate large bowl, toss cranberries, orange juice, corn starch, cinnamon and remaining 1/2 cup granulated sugar; spread over dough in baking dish. Crumble remaining 1/3 of the dough over cranberry mixture; bake 45 minutes or until cranberry mixture is bubbly and edges are golden brown, rotating baking dish once during baking. Cool bar completely in dish on wire rack.
  4. Using overhanging sides of foil, transfer bar to cutting board; remove foil and cut into 16 (3 x 2-inch) bars. Serve bars topped with ice cream or whipped cream garnished with cinnamon, if desired. Makes 16 bars.
