Quinoa Lettuce Wraps

Ingredients

  • 1 1/2 cups dry quinoa
  • 2 garlic cloves, minced
  • 1/2 cup plus 2 tablespoons fresh lemon juice
  • 3 Tbsp Our Family® Extra Virgin Olive Oil
  • 1 tsp Our Family® Fine Sea Salt
  • 1 cup chopped fresh Italian parsley
  • 1/2 cup chopped English cucumber
  • 1/2 cup drained and rinsed canned Our Family® Garbanzo Beans
  • 1/2 cup shredded carrots
  • 1/2 cup shredded red cabbage
  • 1/4 cup Our Family® Roasted & Salted Sunflower Seeds
  • 12 large butter lettuce leaves
  • 1 medium avocado, peeled, pitted and chopped

Directions

  1. Cook quinoa as label directs; transfer to medium bowl and cool. Makes about 4 1/2 cups.
  2. In large bowl, whisk garlic, lemon juice, oil and salt; fold in parsley, cucumber, beans, carrots, cabbage, sunflower seeds and quinoa. Makes about 6 cups.
  3. Serve quinoa mixture in lettuce leaves topped with avocado.
