5 Ingredient Swedish Meatballs

Ingredients

  • 1 package (12 ounces) fully cooked chicken meatballs
  • ½ cup Our Family® Original Sour Cream or Our Family® Plain Nonfat Greek Yogurt, room temperature
  • 2 bags (10 ounces each) frozen Our Family® Steamable Riced Cauliflower
  • 1 Tbsp Our Family® Extra Virgin Olive Oil
  • ½ tsp Our Family® Salt
  • ½ tsp ground Our Family® Black Peppercorn Grinder
  • 1 bag (10 ounces) Our Family® Steamable Sweet Peas
  • 1 cup Our Family® Whole Berry Cranberry Sauce
  • Chopped fresh chives for garnish (optional)

Directions

  1. Prepare meatballs as label directs; stir in sour cream and cover to keep warm. Makes about 16 meatballs.
  2. Prepare riced cauliflower as label directs; transfer to medium bowl. Add oil, salt and pepper; mash with potato masher or back of fork. Makes about 3 cups cauliflower mash.
  3. Prepare peas as label directs. Makes about 2 cups.
  4. Divide cauliflower mash into 4 serving bowls; top with cranberry sauce, meatballs and peas. Garnish bowls with chives, if desired. Makes 4 bowls.
