Our Family Loaded Baked Potatoes

Ingredients

  1. 4 large Our Family® Russet Potatoes; washed
  2. 4 Tbsp Our Family® Vegetable Oil
  3. 4 Tbsp Our Family® Butter
  4. ½ cup Our Family® Sour Cream
  5. ⅓ cup Our Family® Vitamin D Whole Milk
  6. ½ tsp Our Family® Salt
  7. 2 cloves fresh garlic, minced
  8. ¼ tsp Our Family® Ground Black Pepper
  9. ¼ tsp Our Family® Onion Powder
  10. 2 cups thick cut mild cheddar cheese – divided
  11. 8 slices Our Family® Bacon – cooked and crumbled, divided
  12. ¼ cup fresh green onions, trimmed and chopped

Directions

  1. Preheat oven to 400°F.
  2. Rub potatoes with Our Family Vegetable oil, prick with a fork, wrap in foil and place them on a baking sheet. Place in the oven and bake for 1 hour or until tender.
  3. Remove from the oven and allow to cool for 10 minutes. Reduce oven to 350 degrees.
  4. Using a knife, cut each potato in half lengthwise. Spoon out the inside of the potatoes into a large mixing bowl, being careful to not break the skin. Leave a thin lining of potato for support. Return the potato skins to the baking sheet.
  5. In the large mixing bowl, add the Our Family Butter, Our Family Sour Cream, Our Family Vitamin D Whole Milk, Our Family Salt, minced garlic, Our Family Ground Black Pepper, Our Family Onion Powder, half of the Thick Cut Mild Cheddar Cheese and half of the crumbled bacon. Mash and mix until combined, but still slightly chunky. Scoop the filling into the potato shells, and top each with remaining Thick Cut Mild Cheddar Cheese.
  6. Place in the oven and bake for 20-25 minutes or until the cheese is melted and bubbly. Remove from the oven and sprinkle with reserved bacon and green onions.
