High-Protein Strawberry, Banana & Peanut Butter Muffins

Start the day strong with these high-protein strawberry banana peanut butter muffins! Easy to make and packed with energy to power through busy days!

Ingredients

  • Our Family® Canola Oil No Stick Cooking Spray
  • 3 Our Family® Grade A Large Eggs
  • 2 large bananas, halved crosswise
  • 1 ½ cups 4% small curd cottage cheese
  • 1 cup Our Family® Creamy Peanut Butter
  • ¾ cup chopped fresh strawberries
  • ¾ cup dark chocolate morsels

Directions

  1. Preheat oven to 350°; line 12-cup standard muffin pan with baking cups and spray with cooking spray.
  2. In food processor, purée eggs, bananas, cottage cheese and peanut butter until smooth, scraping down sides occasionally; transfer to large bowl. Fold in strawberries and chocolate morsels; divide into prepared cups and bake 30 minutes or until toothpick inserted in center of muffins comes out clean. Cool 10 minutes in pan. Makes 12 muffins.
